NH THAT’S ME – Jean-Pierre Lenferna De la Motte

It is a privilege to have been asked to write a piece for the June 2017 Newsletter and to introduce myself as the Executive Chef of the NH Lord Charles Hotel.

My 14 years in the hospitality industry has seen me come full circle from qualifying from Warwick’s Chef School in Hermanus near Cape Town South Africa, My first job was at a beautiful Atlantic Seaboard Hotel next to the 12 Apostles Mountain Range in Cape Town.  A few years in our country’s beautiful Garden Route, 2years in Marlborough, New Zealand, back to the Garden Route and for the last 5 years first as Executive Sous Chef and then Executive Chef for the NH Lord Charles Hotel where I have been blessed to work with an amazing and dedicated team who love to please and make our guests feel the NH warmth.

I am amazed at how fast the year has progressed as we find ourselves in June the years halfway mark already! June is a busy month for us in F&B and sees us implementing our A la Carte Winter Menu with a focus on locally sourced seasonal produce. We are also using products that are coming from ethically focused farms in our region, Free Range Reared Chickens and Grassfed Wagyu Beef are just two of these special items.

We are also sharpening our knives and polishing our wine glasses in preparation for this years Interhotels Challenge which sees two of our trainees selected to represent our hotel and the NH Brand against 25+ prestigious and internationally recognised hotel properties such as Belmond Mount Nelson Hotel and The One and Only Waterfront hotel to name but a few. Last year we placed second in the culinary discipline and have high hopes and expectations for both culinary and sommelier disciplines this year.

Besides the 2017 Inter Hotel Challenge, we are also in the running again for two prestigious South African tourism awards, the Lilizela Tourism Awards and Sanlam Top Destinations. As the public voting progresses, we are crossing our fingers that we’ll get the same vote of confidence from guests and visitors this year as in 2016, when we won awards in several categories in both awards. The World Luxury Hotels are also coming up. These events motivate and challenge us to go the extra mile to earn positive or constructive feedback, and helps us to know what works and what we could do differently to further improve on our service.

The second half of the year also promises a busy schedule in Conferencing and Banqueting, even as we prepare for our high season offerings for returning international guests.

2017 Cape Legends & Artisan Spirits Inter Hotel Challenge

The 2017 Cape Legends & Artisan Spirits Inter Hotel Challenge is in full swing. As the days become shorter and the winter chills are setting in, things are warming up in our kitchens, where NH The Lord Charles’s candidate chef, Gizelle Els (last year’s runner-up), and wine steward, Michelle Stewart, are enthusiastically practicing for the upcoming competition event in Cape Town on 14 June.  Good luck Ladies!

Recipe of Month

Once considered the wrong end of the cow, so to speak, oxtail was regarded as the poor man’s meat – a cheap cut, bony and fatty and taking a very long time to cook properly. But no longer, as gourmands everywhere have discovered that it’s the perfect braising meat, ideal for rich, smooth, flavourful soups, stews and sauces. Our recipe is for a classic winter stew: oxtail braised in a red wine.
