NH, that’s me: Carter Mwanandimai

It’s almost 10 years since I joined the NH The Lord Charles team in February 2008 – and what a thrilling roller-coaster ride it has been!

I started as a waiter in the Conference and Banqueting Department, and soon moved on to bar work at all events and banqueting functions. By the end of the 2009, I moved to St Andrews 19th Hole Pub, and I still thoroughly enjoy every moment of my work there!

As a people orientated person, have I always enjoyed working as a waiter and bartender and meeting new people. Working for so long in the Hotel’s ‘watering hole’ has given me a fantastic opportunity to meet people of all nationalities and races from all over the world. I have made friends from Mauritius, Zambia, Venezuela, Argentina, Germany and many more. It’s been an absolute pleasure.

I strive to make new and return guests feel welcome and take pride when guests return to the Hotel because they had a memorable experience with us. There is just something unique about St Andrews that you don’t really find somewhere else. It has a unique character and personality that never changes – even if the rest of the Hotel gets a makeover, St Andrews is the little gem inside that will always stay the same. That’s why people return year after year.

With summer around the corner I will be doing what I know best – mixing colourful and delicious cocktails and serving ice cold beers. A glass of wine for a sundowner, or a fine whiskey for the gentleman; and of course we must not forget one of South Africa’s favourites: an ice gold brandy and coke. All of this is available at St Andrews, along with tasty bar snacks and light pub meals.

I am looking forward to many more years in the hospitality industry and meeting many more guests from around the world.

Sunday braai on the Terrace

Not your regular garden variety braai!

Join us at the Garden Terrace on the first and last Sunday of every month for an outdoor braai with all the trimmings! The menu features a range of traditional meat and fish dishes, served straight from the coals, as well as a wide vegetarian selection, made from the freshest, locally sourced organic produce.

Recipe of the month

Crunchies for those with munchies!

Long before there were energy bars made from all kinds of cereals, fruit and nuts, there were crunchies – the wholesome, sweet and chewy coconut and oats biscuit that every South African knows and loves. There’s nothing better than a crunchie and a cuppa in the morning – or any time you feel the need to munch on something more-ish!

‘Crunchies for Those with Munchies’


  • 300 g honey
  • 500 g butter
  • 560 g cake flour
  • 640 g castor sugar
  • 320 g coconut desiccated (klapper)
  • 320 g rolled oats
  • 125 g Rice Krispies
  • 20 g bicarbonate of soda


  1. Preheat oven to 170o
  2. Soften and mix the butter and honey.
  3. In a separate bowl, combine all the other ingredients.
  4. Add the honey and butter to the above ingredients and mix thoroughly.
  5. Press mixture into a lined baking tin and bake for 15 minutes, or until light golden brown.
  6. Cut into blocks while slightly warm, but allow to cool completely before transferring to a cookie tin or jar.
